The pasta, straw-colored, is compact and elastic with a fine look. When the product becomes more mature, the dough may become slightly faded. Definitely pleasing, sweet and delicate, tending to the spicy and tasty with the aging of the seasoning. The production of this cheese is limited only to the seasons in which the pastures of the Iblean plateau are particularly lush. (About 6 months a year).
